Talking with FedericoMy Roots

My grandfather and my father are my main inspirers, those who handed down to me the knowledge of the rhythms of nature. They taught me to enhance our territory, preserving the authenticity and character of the grape in its piace of origin. Working in these hills, in San Gimignano, a World Heritage Site, is the privilege of every day.
In the 9 hectares of vineyards at 300 meters above sea level, formerly called Terre di Sovernaja, I develop a complete, certified organic agricultural project, where, in addition to the production of grapes, oil and saffron, animals can live freely, creating an essential natural balance.

I believe that the well-being of a plant depends on the balance that surrounds it, and that the plant itself helps to create and maintain. This is my life equation!

2019Viti Sparse

  • Tasting notesWhite wine with a straw yellow color. Almost "marine" impact for the notes of aromatic herbs such as rosemary and oregano, which slope down leaving space for fruity influences of citrus, pear and white peach. The finish refers to mineral and floral sensations. On the palate it reveals freshness and a prompt and stimulating gustatory response, with a sapid background vein, which accompanies an enveloping sip.
  • Vinification and agingSoft pressing of the whole grapes exclusively of single-variety Vernaccia di San Gimignano, fermentation of the must far 40 days in concrete tanks. Aging far 1O months in concrete and steel tanks and 1 year in the bottle.

  • Type of vineyard cultivationGuyot. This allows us to have more sparse bunches than, combined with careful manual work, allows us to minimize treatments. The management of the vineyards is done with a certified organic system.

2019Assola

  • Tasting notesWhite wine with a straw yellow color. Delicate wild fiorai, English rose, peony, citrus and tropica I touch, balsamic gust of mint and chalk. Spicy and tasty sip of hawthorn and rennet appie, it explodes in flavor and turgor of lytchee, ani se and absinthe to lengthen the finish in a crescendo of salt and grapefruit.
  • Vinification and agingSoft pressing of the whole grapes exclusively of single-variety Vernaccia di San Gimignano, slow fermentation of the must far 40 days in tanks of natural concrete. Aging far 1O months in natural cement tanks on its own yeasts and 1 year in the bottle.

2019Sovernaja

  • Tasting notesAt sight it shows golden lights on a straw background. On the nose, peppermint, cedar peel and mediar pulp stand out with hints of officinal herbs such as marjoram and oregano. lt enters the mouth subtly and then expands in a decisive and vibrant sip in which the marked acidity is enveloped by a savory and material volume.
  • Vinification and agingThe grapes are manually de-stemmed with selection of whole grapes. Fermentation and maceration on the skins, 50% for 30 days and 50% for 6 months. Aging for 1 year in natural concrete tanks and 1 year in bottle. The whole process from the field to the winemaking is carried out without the use of energy, therefore fully manual.

2019Anime 9

  • Tasting notesDeep ruby red color. The aromas that appear on the nose are a combination of red fruits and black fruits, with a frame of peppery spice. On the palate it has a strong and broad attack, which continues in a taut and long-lasting tannic vibration.
  • Vinification and agingFermentation and maceration of 40 days in Rotary Tonneaux, performing rewinds without using energy. Aging for 1 year in Tonneaux, Barrique and 1 year in the bottle
  • Variety of grapesSangiovese, Colorino, Canaiolo, Ciliegiolo, Pugnitello, Black Malvasia, Trebbiano, Long white Malvasia and a still unknown grape variety.

  • Tasting notesRuby red wine. Fruity nose with hints of raspberries. Round, fresh and fruity palate.
  • Vinification and agingThe grapes are de-stemmed. Fermentation of 20 days in natural cement tanks. Aging for 8 months in second passage Barrique and Tonneaux and 1 year in bottle.

2020Piaggia a Ponente IGT Toscana Rosato

  • Tasting notesRosé wine with a color between onion skin and coppery. A fine and very pleasant bouquet of freshly picked berries, cherry, pomegranate, strawberry, carnelian, but also pleasant citrus hints. The taste is refreshing, with a pleasant savory background which increases progressively as the fruity flavor decreases.
  • Vinification and agingSoft pressing of the whole grapes with harvesting of the free-run must only. Fermentation and aging in natural cement tanks at a controlled temperature. Aging for 1 O months in concrete and steel tanks and 1 year in the bottle.

2020Piaggia a Levante IGT Toscana Bianco

  • Tasting notesWhite wine with a straw color. Fruity, it carries with it the trace of its "maritime" origins. Rich in citrus nuances, white peach, plum, light almond, does not lack floral veins and hints of aromatic herbs such as rosemary, sage, lemon grass and lemon balm. On the palate, it has a great freshness, mirrored in the aromatic texture, gives distinctly minerai sensations, citrus returns and a delicately savory finish.

  • Tasting notesSparkling wine with a straw yellow color. Citrus fruits grapefruit and lime, chamomile and chalk, mint and white pepper. Fresh and perky sip, carbonic measured to give pleasure and rhythm. Length and lightness with a fresh and tasty finish of apricot jam and gooseberries.
  • Vinification and agingSoft pressing of the whole grapes. Fermentation of the must for 40 days in natural concrete tanks. Ancestral refermentation in the bottle with the addition of must in the crescent moon. Aging for one year in the bottle.

Andrea PizzolatoThe Oenologist

Andrea Pizzolato, oenologist born in 1989. A native of San Gimignano, he graduated from the University of Viticultural and Oenological Sciences and Technologies in Valpolicella, where he worked as a research collaborator with one of the most brilliant minds in world enology, the late Prof . Roberto Ferrarini. He has carried out oenological missions in America, Spain, Germany, France and Russia. He declares to feel at home wherever there is vine, wine and joviality.
